Executive Chef: Cheung Siu Kong – In 1987, he joined the renowned Lei Garden Restaurant in Hong Kong where he honed his skills in crafting dim sum and authentic Cantonese cuisine. In 1996, he moved to Singapore and worked for the Lei Garden before joining Summer Pavilion in 2003.  He earned the Michelin star in 2016.

Stuart Clarke Restaurant ReviewReview: The Summer Pavilion, is a one Michelin-star Cantonese restaurant at The Ritz-Carlton, Millenia Singapore.  This was a great experience, and I tried a number of very unusual dishes from the tasting menu.  I have to admit that some were not to my taste, but the exceptional quality of the food and the cooking, fabulous presentation and the great service, were all outstanding.

The wine pairing was excellent, although I only had 1 glass over 2 courses, which I found to be a challenge. I should have simply ordered more.

I wouldn’t hesitate to return next time I’m in Singapore, but I would try a selection of other dishes from the a la carte menu.
